Probiotics are so good for you and can be easily found in pill form. However, you can also get probiotics from fermented foods, including Kombucha. And Kefir. Now, while I love Kefir, I don’t drink dairy. However, the other day I stumbled across a recipe for how to make Kefir with coconut water. I can’t wait to try it and wanted to share the recipe with you too, right away.

For those of you familiar with making Kombucha, you know you need a starter and about a week. But did you know that water kefir has twice as many strains of beneficial bacteria as kombucha and takes as little as 24 hours to brew?

Ingredients:

1 quart unsweetened Coconut Water

4 Tbsp Kefir Grains

2 Tbsp Rose Water

Instructions:

1. You’ll want the coconut water at room temperature or you can heat it to 98.6°F.

2. Pour the water into a large, sterilized jar and add the activated kefir grains and rose water. (You could also add a cinnamon stick if you wanted although I don’t feel like it would mix well with Rose Water.)

3. Cover the jar tightly with a kitchen towel and secure it with a rubber band. Leave the jar at room temperature for 24 to 48 hours. Strain out kefir grains and save for another use.
