Now that summer is in full swing it’s hot. And in some places it’s really hot. So, what better to deal with the heat than popsicles? But not what most of us think of when the word is mentioned. No, these aren’t your typical, child’s summer treat.

BALSAMIC-ROASTED BLUEBERRY CHIA POPSICLES

Yield: 6 popsicles

INGREDIENTS

1 tablespoon coconut oil
1 1/2 cups blueberries
1/4 cup plus 1 tablespoon raw honey
2 teaspoons coconut sugar
1 tablespoon balsamic vinegar
1/2 teaspoon freshly ground black pepper
1/2 teaspoon sea salt
2 cups coconut milk
1/3 cup chia seeds
1 teaspoon vanilla extract

INSTRUCTIONS

1. Melt coconut oil in a small saucepan over medium heat. Add in blueberries and sauté to blister in the oil. Add in 1 tablespoon honey, coconut sugar, and balsamic vinegar. Stir and let reduce slightly.

2. Stir in black pepper and salt. Set aside to let cool.In a large bowl, mix together coconut milk, chia seeds, 1/4 cup honey, and vanilla.

3. Divide blueberries and their juices between popsicle molds. Top with chia mixture, place in popsicle sticks and freeze for at least 6 hours.

Run the molds under warm water for 5 to 10 seconds before pulling them out of their molds.
