If you are like me and don’t eat meat OR maybe you are just really trying to eat a bit “cleaner,” you are going to LOVE this recipe. I know I do.

Buffalo wings are a popular dish and become even more popular during big game nights. And as we all know THE BIG GAME will be on tomorrow. Millions of people will be tuned in and a load of those people will be at potluck parties to celebrate.

I guarantee if you bring these little babies, even your meat-loving friends will thank you! Also, just FYI, these cauliflower bites are:

Ingredients:

  • 8 cups 1½-inch cauliflower florets
  • 2 tablespoons EVOO
  • ¼ teaspoon kosher salt
  • 2 tablespoons hot sauce like Frank’s or Sriracha
  • 1-2 tablespoons Sriracha sauce
  • 1 tablespoon melted vegan (or regular) butter
  • 1 tablespoon lemon juice

Preparation

  1. Preheat oven to 450°F. Coat a large rimmed baking sheet with cooking spray.
  2. Toss cauliflower, oil, and salt in a large bowl and spread on the prepared baking sheet. Roast cauliflower until it begins to soften and brown on the bottom, around 15 minutes.
  3. Meanwhile, combine hot sauce/sriracha, butter, and lemon juice in the large bowl. Add the roasted cauliflower and toss to coat. Return the cauliflower to the baking sheet and continue roasting until hot, about 5 minutes more.
