Just yesterday I posted an amazing list of good for you AND delicious vegan “nyce cream” recipes and I’m back today with another one! If you’ve been on this page awhile you know we love golden milk (which is made from turmeric and coconut milk, or any milk you prefer- plus a bit of sesame oil- SO GOOD), so when I saw this Golden Milk Turmeric Ice Cream, made with cashews and pecans, I was elated. Oh, and like the others, you don’t even need an ice cream maker!

Turmeric is rich in antioxidants and high in anti-inflammatory properties, it’s one of the best spices you can add to your food for an extra boost of health and it adds a unique flavor and color!

Balancing out the turmeric is ginger, cinnamon, and a bit of maple syrup but it’s the creamy texture- thanks to the cashews- that will win you over. By adding raw, pre-soaked cashews to the coconut milk your end result is a thick and creamy masterpiece.

Golden Milk Turmeric Ice Cream Recipe

Ingredients:

  •  1 14-ounce can coconut milk (can be full fat)
  •  ½ of a 14-ounce can coconut cream (or a ½ cup of coconut milk/coconut yogurt)
  •  1 cup raw, pre-soaked cashews
  •  ¼ cup maple syrup
  •  2 t turmeric
  •  1 t cinnamon
  •  ½ t ground ginger
  •  ¼ t cardamom
  •  OPTIONAL: 3 T raw pecans (and as many other pecans as desired for topping)

Instructions:

  •  Soak cashews overnight in a bowl of water (or until they are soggy which is normally a  minimum of 2 hours).
  •  Once the cashews are ready, layer a standard meatloaf pan with parchment paper,  with the ends hanging over the sides. Place in the freezer while you prepare the ice  cream.
  •  Drain the cashews and add them to a blender/food processor with all the other  ingredients.
  •  Process everything on high until the cashews (and pecans if you choose) are broken down and everything is fully combined.
  •  Remove the pan from the freezer and pour the ice cream mixture in.
  •  Place the pan in the freezer overnight to harden (be sure the pan is flat so it hardens evenly).
  •  The next day remove (and add pecans if you are using them) and enjoy!
