As you all know, I’m a vegan but that doesn’t mean that eating is flavorless and boring- quite the opposite! One of my favorite things to have for breakfast or lunch (or even as a quick snack) are smoothies. You can make them out of just about anything and they travel well. Just make sure to drink them within 24 hours or you’ll lose all the nutrients!

Ingredients

  • 3 cups Coconut milk (I like full fat in the can)
  • 1/2 tsp finely grated lemon zest
  • 1/2 cup fresh lemon juice
  • 1/4 medium avocado, peeled and pitted
  • 1 tsp finely chopped fresh rosemary
  • 3 cups frozen pineapple

Preparation

  • Pour in coconut milk, lemon zest, lemon juice, avocado, rosemary and 1 1/2 cups frozen pineapple into the blender. Process on high for about 30 seconds or until smooth.
  • Add remaining frozen pineapple and process for 30 seconds until smooth and creamy.  
  • ENJOY!
